Chicken Dinner in a Casserole

Moms, Here is an amazingly easy dinner for family'
double if friends are coming


BAKED CHICKEN DINNER
Serves 4

1 cup quick cooking rice 2 tablespoons olive oil
1 10-once can condensed consomme 1-10 ounce package, frozen mixed vegetables
1 tablespoon chopped onion juice of 1/2 lemon
2 tablespoons water salt and pepper
1/4 teaspoon savory
4-31/2 ounce servings chicken parts


* Bring first 5 ingredients to a boil, pour into covered casserole or baking dish.

* Saute chicken pieces, slowly, in hot oil, about 10 minutes, place on rice mixture.

* Break up mixed vegetables and shake around chicken,

* Sprinkle with lemon juice and seasonings, cover

* Bake in a 350 degree oven for 35-40 minutes.

Enjoy and only 300 calories per seving

Dad's Summer Garden Casserole

GARDEN TOP OF STOVE CASSEROLE
Serves 4

2 tbsp cooking oil 1/4 tsp ground cloves
1 1/2 cups fresh green beans OR 1 bay leaf, crumbled
1 10 ounce pkg frozen green beans salt, pepper
4 small cooked onions 2 tbsp water
2 tsp sugar 1 large tomato, cut in wedges

* Heat oil, add all ingredients, except tomato, stir, cover tightly, cook 10 minutes.

* Lay tomato wedges on top, cook 5 minutes.

Easy to make, and only 110 calories per serving.

Spaghetti and Meat "Rolls"

Spaghetti with a Difference
Serves 4

Make the night before, cover and refrigerate for 24 hours: Bake in350 degree oven

1 egg, beaten

1/4 cup chopped onion

2 tbsp, soft bread crumbs

1/8th tsp pepper

1 lb ground beef

12 oz Spaghetti sauce , with vegetables

3/4 lb spaghetti

boiling water

In Advance; (the day before)

Combine egg, onion, bread crumbs and pepper;

Add ground beef, mix well and form into 2 rolls, approx 6 inches long;

Place in a 10x6x2-inch baking dish.

Pour Spaghetti Sauce over all; Cover, refrigerate up to 24 hours.

Before serving; Bake uncovered, for 1 1/4 hours, spoon sauce over occasionally.

This is the time to relax and do things with family or other chores while dinner is cooking.

10 minutes before dinner time, cook spaghetti as per package directions;

Drain, put spaghetti on a serving platter, Arrange meat rolls on top and pass the sauce.

Salad with an International Flare

Preparation Time; 15 Minutes Serves 4
Cooking Time; 15 Minutes
A family meal in a bowl colorful, and healthy too.
Great leftovers- if there be any!
Dressing:
Whisk together , in a small bowl, Set aside;
2 tbsp each rice vinegar and vegetable oil
1 tbsp each chili garlic sauce; soy sauce & minced ginger root
1 clove garlic, minced
1/4tsp each salt and pepper
NEXT
1 tsp each 5 spice powder and packed brown sugar
12 oz grilling steak (top sirloin OR strip loin
Combine; spice powder and sugar, rub into both side of steak
Place steak on grill over medium heat, close lid, grill. , turn once, until medium rare to medium (10-15 minutes) Tent with foil, let stand 5 minutes. Thinly slice across the grain.

In a heat proof bowl, pour boiling water over, broccoli, carrots and pepper; let stand uncovered for 1 minute, drain an pat dry
3 cups small broccoli florets
2 carrots, thinly slice, diagonally
1 sweet red pepper, julienned

SALAD:
In large salad bowl,, combine vegetables, with 3 cups of warm brown rice; 4 green onions sliced, and 1/4 cup coriander or parlsey andand steak; add dressing to coat;
Serve warm

Perfect Chicken Paella for Single Moms and Dads

(Do the work the night before ;
(relax and enjoy family time while dinner is cooking)
.
Serves 4

3-pound, ready to cook, broiler/fryer chicken, cut up
2 tbsp cooking oil,( like olive oil)
1 1/2 cups chicken broth
1 cup frozen peas OR drained canned peas.
1 6-ounce package of saffron rice mix OR use quick cooking rice, add saffron seasoning.
1/2 cup sliced mushrooms
1/2 pound shelled frozen shrimp
1/4 cup onion soup mix.

The night before; brown chicken in oil, season with salt and pepper.
Mix remaining ingredients, place in 3 quart casserole,
Top with chicken and sprinkle with paprika.
Cover, refrigerate up to 24 hours.
Before serving; bake uncovered at 350degree F. for 1 1/4 hours.
